巴斯克起司蛋糕又稱巴斯克風味起司蛋糕,位於西班牙北部,巴斯克地區的一種將蛋糕外側烤至焦黑的具有濃厚風味的起司蛋糕。名為La Viña的餐廳發明了這種蛋糕

將表面烤至焦黑並將一面裹上焦糖,是蛋糕內部柔軟的特徵。我們空廚主廚說越焦越好吃,越凹越漂亮呢!
做法通常是將奶油芝士、雞蛋、砂糖、小麥麵粉、鮮奶油等混合攪拌後用烤箱烤制後冷藏而成。

有濃厚的的起司風味,也有將葡萄酒與其搭配的吃法。儘管是烤至焦黑的起司蛋糕,內部卻入口即化並且沒有焦味。
