味增在日本已有數千年的歷史,追溯其最早的歷史來源,有一說可能來自於中國陳釀的「大豆醬」,是中國傳到日本的舶來品,日本人將其發揚光大,發展出獨特的釀造方式。
味噌製作過程是在米中放入發酵材料,在控制溫度內,發酵隔夜,長出黴菌後,再放水和鹽攪拌均勻,密封一到兩年,味噌所含的膳食纖維有助消化,維生素B、E含量也滿高的。美國黃豆協會大力推崇味噌營養價值,以黃豆釀製成的味噌呈現的褐色色素,是由碳基化合物與胺基化合物反應產生的一種類黑精色素,具有去活性氧抗自由基的效果。
